- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This keeps the cookies from sticking and helps them brown evenly.
- In a bowl, whisk the egg with the sugar and vanilla extract until smooth. If your sugar clumps, give it a quick run through your fingers first.
- Stir in the almond flour and salt until you get a thick, sticky dough. Don’t overmix—just until combined works best for this type of cookie.
- Scoop out heaping teaspoons of dough and drop onto the lined baking sheet, spacing cookies about 2 inches apart. Wet your fingers and press them down slightly, since the dough’s sticky.
- Sprinkle each cookie with sliced almonds, gently pressing them on so they stick. Don’t worry if some fall off during baking—it happens every time I make these.
- Bake for 13–15 minutes until the cookies have golden edges but the centers are still pale. If your oven runs hot, check at 12 minutes.
- Let the cookies cool for 10 minutes on the baking sheet—they’re fragile while warm. Once set, transfer to a rack to finish cooling.
Notes
I turn to these almond cookies every time I need dessert in a hurry, but still want something homemade and just sweet enough. They come out of the oven in under half an hour, so I can even whip them up on a weeknight after dinner.
