  • 0.33 cup coconut sugar
  • 1 unit egg
  • 2 tablespoon coconut oil melted
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder
  • 1 pinch salt
  • 0.25 cup sliced almonds to top

Method
 

  1. Preheat the oven to 180°C (356°F). Line a baking sheet with parchment paper.
  2. In a bowl, combine almond flour, coconut sugar, baking powder, and salt. Mix well.
  3. Add the egg, melted coconut oil, and vanilla extract to the dry ingredients. Stir until a soft dough forms.
  4. Scoop small portions of dough (about 1 tablespoon each) and shape into balls. Place them onto the prepared baking sheet, leaving space between each.
  5. Press a few sliced almonds on top of each cookie for decoration.
