- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large bowl, combine almond flour, coconut sugar, salt, and baking powder. Mix well until evenly incorporated.
- Add melted coconut oil, egg, and vanilla extract to the dry ingredients. Stir until a dough forms.
- Shape the dough into small balls (about 1 tablespoon each) and place them on the prepared tray. Flatten each gently with your fingers.
- If desired, sprinkle sliced almonds on top of each cookie for extra flavor and crunch.
- Bake for 10-12 minutes, or until the edges are golden brown. Do not overbake.
- Let the cookies cool on the tray for 5 minutes, then transfer to a wire rack to cool completely before serving.
