- Heat your oven to 220°C (425°F). Prick the eggplants all over with a fork. Set them on a lined baking sheet.
- Roast eggplants for about 30–35 minutes, turning once halfway. When a knife goes in with no resistance and the skins are collapsed, they’re done. Let them cool just enough to handle—don’t wait too long or the flesh sticks to the skin.
- Cut the eggplants open and scoop out the pulp with a spoon. Set in a colander for 5–10 minutes to drain extra liquid. This keeps the dip thick, not watery.
- Mash eggplant pulp with a fork or pulse with a few short bursts in a food processor. I like it chunky, but you can go smoother if you prefer.
- Add tahini, lemon juice, garlic, olive oil, and salt. Mix well. Taste and adjust salt or lemon—add a half pinch or squeeze at a time. You can always add more, but you can’t take it out.
- Scoop into a bowl. Drizzle with a little olive oil and sprinkle with smoked paprika if using. Serve with pita or raw vegetables.

I reach for baba ganoush anytime I want something creamy, tangy, and way faster than hummus if I’ve got eggplant in my veggie drawer. Roasting the eggplant until the skin goes nearly black is the secret—don’t rush that part.
