Method
- Wash and dry the cherry tomatoes and basil leaves. If your mozzarella feels wet, pat it dry with a paper towel — this keeps the skewers from turning soggy.
- Thread one tomato, one mozzarella ball, and one basil leaf onto a skewer. Repeat the sequence, fitting three tomatoes and two mozzarella balls per skewer if you can (that's how I fill a 15 cm skewer). If using shorter skewers, stick to two rounds.
- Arrange all skewers on a serving plate. Drizzle with olive oil first so it soaks into the cheese. After that, zigzag the balsamic glaze over the top so it doesn't bleed onto the plate.
- Finish with a big pinch of flaky salt (it really gives crunch) and black pepper. Serve right away. If prepping ahead, wrap tightly and add oil/glaze right before serving — otherwise the basil goes limp.
Notes
I make these caprese skewers every time friends drop by and I don’t want to fuss over a burner. My trick: they taste even better outdoors, when the tomatoes are still a tiny bit cool from the fridge.
