- Heat olive oil in a large pot over medium heat. When it shimmers, add the diced onion and cook for about 4 minutes, until soft.
- Add the garlic, cumin, smoked paprika, oregano, and red pepper flakes if using. Stir for 1 minute — the spices should smell toasted but not burn.
- Dump in the diced tomatoes (with juice), chickpeas, and vegetable broth. Scrape the bottom to catch any brown bits.
- Bring to a simmer. Lower the heat and let it bubble gently, uncovered, for 15 minutes. The stew will thicken a bit. Stir a few times — chickpeas like to stick to the bottom if you forget them.
- Stir in the spinach and wait for it to wilt, about 2 minutes. Taste and add salt and black pepper. I start with half the salt, then check again at the end.
- Turn off the heat and stir in the lemon juice. That last splash makes all the difference — don’t skip it.
Notes
I come back to this chickpea stew on weeks when I want real food, fast, that keeps me steady until the next meal. The tomato broth soaks into the chickpeas and that little bit of smoky paprika makes it taste like you put in more work than you did.
