- Pour 1 cup couscous into a large heatproof bowl. Add 1 1/4 cups hot vegetable broth on top, cover with a plate, and let it sit undisturbed for 5–7 minutes. Don’t peek early—steam is what makes the couscous fluffy.
- After 7 minutes, fluff the couscous with a fork. If you see any clumps, break them up gently using the back of your fork, not a spoon—this keeps the grains light.
- Add chopped tomatoes, cucumber, red onion, parsley, and fresh mint to the bowl. The more finely you chop the onion, the less bite it has.
- In a small cup, whisk together olive oil, lemon juice, salt, and black pepper. Pour this dressing over the couscous mixture.
- Toss gently just until everything's combined. I use my hands or two big forks—less crushing, more mixing.
- Add feta cheese and toss once. Serve right away, or chill for later. The flavors get bolder if you give it 1–2 hours in the fridge.
Notes
I started making couscous salad on those nights when I need dinner on the table fast but still want something that keeps well for lunch the next day. Couscous almost feels like kitchen magic—the grains steam up while I chop the veggies, and by the time I'm done, so is dinner.
