- Put couscous in a large bowl. Pour in boiling water, add 1/4 teaspoon salt and 1 tablespoon olive oil, and cover with a plate. Let sit for 5 minutes — it steams and softens without needing stovetop space.
- Fluff couscous with a fork to break up any clumps. Don’t skip this; it keeps things light, not gummy.
- Add tomatoes, cucumber, red pepper, red onion, parsley, and mint if using. Toss gently to spread the crunchy bits through the couscous.
- In a separate glass or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper for the dressing. I always taste for salt here — citrus makes flavors pop, but you may need a pinch more.
- Pour the dressing over the salad and toss until every bit is coated. Top with crumbled feta right before serving so it stays creamy, not mushy.

I reach for this couscous salad when I have random veggies to use up, or when I need something filling that tastes just as fresh on day two. Couscous works here because the grains don’t get soggy, and it all comes together in less than half an hour—even if you get interrupted.
