- Pour the couscous into a medium mixing bowl. Add the just-boiled water over the top. Cover the bowl with a plate or lid and let it sit for 5 minutes—don't peek.
- While you wait, chop the cucumber, tomatoes, onion, parsley, and mint. Try to keep everything about the size of a chickpea for even flavor in each bite.
- After 5 minutes, uncover the couscous and fluff it gently with a fork. If any water remains at the bottom, stir another minute—it will soak in as the couscous cools.
- Add the chickpeas and all the chopped veggies and herbs to the bowl. Mix gently with a large spoon or clean hands.
- For the dressing: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl or shake up in a jar.
- Pour the dressing over the salad (I start with half, stir, then taste to see if it needs more). Mix well. Adjust salt and lemon juice if you want a bigger pop.
- This couscous salad is best at room temperature. You can store it in the fridge for up to 3 days, but I let it stand a few minutes after chilling so the flavors open up again.
Notes
I come back to this couscous salad every time my meals need a reset. It's fast, flexible, and actually fills me up until lunch—not something most salads do.
