- Preheat your oven to 400°F (200°C). Spread the diced red bell pepper and zucchini on a baking sheet, toss with a splash of olive oil and a pinch of salt. Roast for 15–18 minutes, or until just tender and lightly browned at the edges.
- While the veggies roast, add couscous to a large mixing bowl. Pour hot vegetable broth over it. Cover bowl with a plate and let it sit 5 minutes, then fluff grains with a fork so they stay light.
- While couscous steams, combine olive oil, lemon juice, tahini, cumin, minced garlic, salt, and black pepper in a small jar or cup. Whisk or shake until you get a creamy, smooth dressing.
- Add chickpeas, roasted veggies, cherry tomatoes, and red onion to the couscous bowl. Drizzle most of the dressing over and toss gently — use your hands or a wide spoon so the couscous doesn’t clump.
- Top with fresh parsley and feta (if using). Taste. If it needs more salt or a hit of sour, add a pinch or an extra squeeze of lemon now. I like to keep a little extra dressing on the side — couscous will soak it up as it sits.
Notes
Whenever I want something that holds up in the fridge and tastes good cold or at room temp, this couscous salad is what I make. I can toss it together with whatever veggies are around and, honestly, the lemon-tahini dressing is what sells it for me—creamy, but still bright.
