- Preheat your oven to 200°C (400°F). Spread the torn pita pieces on a baking sheet. Bake for 7–8 minutes until they're golden and crisp. Let them cool while you prep the rest.
- In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, radish, red onion, parsley, and mint. Toss gently so you don’t bruise the greens.
- In a small jar, combine olive oil, lemon juice, red wine vinegar, sumac, salt, garlic, and black pepper. Shake well — if you don’t have a jar, whisk in a bowl. I always taste before pouring; sumac can be punchy depending on the brand.
- Pour the dressing over the vegetables. Toss just until everything’s coated. Wait to add pita until right before serving.
- Just before you eat, add the crisp pita chips and toss one more time. Serve right away, while the pita is crunchy.
Notes
I keep coming back to fattoush because it has that perfect mix: loads of fresh crunch, bold citrus, and something to really chew — the pita chips. When you're tired of limp salads, this one actually feels like a meal.
