- Start by toasting the pita bread: Heat your oven to 375°F (190°C). Spread pita pieces on a baking sheet and drizzle with a small splash of olive oil. Bake 7–9 minutes, turning halfway, until they’re crisp and golden at the edges. Let them cool on the tray — they’ll crisp more as they sit. (Don’t stack them or they’ll get soggy.)
- Grab a large salad bowl. Add the lettuce, tomatoes, cucumber, radish, red onion, parsley, and mint. If you prep ahead, keep the herbs separate until just before serving so they stay fresh and don’t bruise.
- Make the dressing in a small jar or bowl: combine olive oil, lemon juice, red wine vinegar, sumac, salt, and black pepper. I shake the jar with the lid on — it emulsifies faster than whisking in a bowl.
- Pour about three-quarters of the dressing over the veggies. Toss gently until everything looks slick but not swimming in dressing. Add the toasted pita and toss again, then taste and decide if you want the rest of the dressing. I usually wait one minute before a final toss so the pita softens just a little — never let it sit too long or you lose the crunch.
- Scatter a little extra sumac on top, if you like. Serve right away for the crispiest pita.

I go back to fattoush anytime I'm craving something crisp and bright but only have 20 minutes. Toasted pita adds a real crunch, and it reminds me of how we always tried to save day-old bread at home.
