- Preheat the oven to 180°C (350°F). Place the pita bread pieces on a baking sheet and bake for 8–10 minutes, or until golden and crispy. Let them cool.
- In a large salad bowl, combine the chopped romaine lettuce, diced tomatoes, cucumbers, radishes, red onion, parsley, and mint. Toss gently to mix.
- In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and black pepper to make the dressing.
- Add the toasted pita pieces to the salad bowl and pour the dressing over. Toss everything gently so the pita stays crunchy, and serve immediately.
