Method
- If you want extra tender calamari, soak the sliced rings and tentacles in milk for at least 10 minutes while you prep the other ingredients. Drain and pat dry with paper towels before dredging. I always do this when using frozen squid.
- Slice the calamari tubes into rings about 1 cm thick. Leave small tentacles whole.
- Mix the flour, cornstarch, salt, and pepper in a shallow bowl.
- Heat the oil in a deep, heavy-bottomed pot over medium-high heat. You want it hot enough that a small bit of flour sizzles and floats to the top in a few seconds (about 180°C/350°F).
- Working in batches, toss the calamari in the flour mixture, then shake off any excess. Don’t crowd the pan or they won’t crisp up.
- Fry for 60–90 seconds, just until crisp and lightly golden. Any longer and they go rubbery—pull one out and cut it to check.
- Drain on paper towels. Sprinkle with sea salt right away while they’re hot so it sticks.
- Serve immediately with lemon wedges. If you want to keep them warm, put them in a low oven (90°C/200°F) on a rack so they stay crisp, not steamy.
Notes
I make fried calamari when I want something crispy you can snack on straight from the kitchen counter. My trick to avoid stubborn, chewy rings? Milk. That short soak turns even supermarket squid into something soft enough to eat by the handful.
