- Slice the eggplants. Cut them into 1/2-inch thick rounds. If your eggplants are wider at the bottom, I sometimes cut those slices in half to keep things even.
- Salt the slices generously on both sides and lay them out on a plate or baking sheet. Wait about 15 minutes for the salt to draw out some moisture—it helps with browning and keeps the slices from getting soggy.
- While you wait, whisk together the olive oil, minced garlic, and black pepper in a small bowl. Set aside.
- Once the eggplant starts to bead with water, pat each slice dry with a towel. This step is key—don’t skip it or you’ll miss that crisp edge.
- Brush both sides of each slice with the garlic-olive oil mix. Be generous—eggplant soaks it up fast.
- Heat a grill or grill pan over medium-high until a drop of water sizzles immediately. Lay the eggplant slices down in a single layer. No crowding or they’ll steam instead of sear.
- Grill each side for about 4–5 minutes, until deep golden marks appear and the edges soften. Flip once only. If you want extra smokiness, press gently with a spatula for the last minute.
- Transfer to a plate, sprinkle with remaining salt, and serve warm or room temp. I like to eat these with lemon wedges or toss them on top of a salad.
Notes
I grew up on grilled eggplant, especially in the summer when it’s everywhere and cheap. This version is fast enough for a weeknight, and I love how the edges go crisp if you’re patient with the grill.
