Method
- Rinse the sardines under cold water and pat them dry with a kitchen towel. Leave heads and bones; both add flavor and help keep the flesh together on the grill.
- Rub each sardine inside and out with olive oil. It helps prevent sticking and crisps the skin.
- Sprinkle the coarse salt and black pepper all over the sardines. I always salt one side, lay them on a tray, then salt the other before grilling.
- Heat your grill or grill pan until a drop of water sizzles in less than a second. If you have a fish basket or use foil, it makes cleanup easier, but it’s not essential.
- Place the sardines on the grill. Don’t nudge them for the first 2–3 minutes. When the skin loosens from the grill, carefully flip each fish with a thin spatula. Cook another 2–3 minutes — you’re looking for crisp, golden skin and flesh that flakes easily with a fork.
- Squeeze lemon over while they’re still hot and serve right away.
