Method
- Pat the sardines dry with paper towels, inside and out. This step is what gets you a crisp skin on the grill.
- Rub the sardines all over with olive oil, then sprinkle both sides with sea salt and freshly ground black pepper. Go lighter on the salt—you can always add a pinch after grilling.
- Heat your grill or grill pan until very hot. I wait until I can hold my hand above it for just a second before it gets uncomfortable. If you’re using an outdoor grill, clean and oil the grates well so the sardines don’t stick.
- Place the sardines on the grill. Don’t crowd the pan—give them room. Grill for about 2–3 minutes per side, turning once, until the skin is crisp and the flesh is starting to pull away from the bone. Don’t overcook; sardines go dry fast.
- Transfer the sardines to a platter. Squeeze fresh lemon juice over the top while they’re still hot, then scatter with chopped parsley.
- Serve right away with extra lemon wedges. I usually have crusty bread on the side to scoop up any juices.
Notes
I make grilled sardines when I want real Mediterranean flavor fast, especially when it’s too hot to turn on the oven. Sardines remind me of family lunches by the sea—quick, a little bit messy, but always worth it.
