Method
- Preheat your grill to high heat for at least 10 minutes.
- Pat the sardines dry with paper towels and place them on a tray.
- Drizzle olive oil over the sardines and rub it in to coat them evenly.
- Season the sardines generously with sea salt and black pepper. Optionally, sprinkle with minced garlic for extra flavor.
- Spritz the sardines with fresh lemon juice from one of the lemons.
- Brush the grill grates with olive oil to prevent sticking.
- Place the sardines carefully on the hot grill. Grill for 3–4 minutes per side, until the skin is crisp and marked, and the flesh flakes easily.
- Remove from the grill and transfer to a serving platter.
- Garnish with chopped parsley and serve immediately with lemon wedges on the side.
