- Add the chickpeas, tahini, lemon juice, garlic, olive oil, salt, and cumin to your food processor or blender.
- Blend for about 50 seconds. Scrape down the sides with a spatula. If your machine is struggling, add one tablespoon of ice water at a time and blend again until it's creamy.
- Taste and adjust: I pour in half the salt first, blend, then taste before adding more. You can add a bit more lemon juice or cumin if you like it sharper or warmer.
- Scoop the hummus into a shallow bowl. Use the back of a spoon to make a swirl, then drizzle with olive oil, sprinkle over paprika, and top with chopped parsley.
- Serve with pita wedges, sliced cucumber, or carrot sticks. If making ahead, cover and chill—just bring it to room temp before serving for best texture.

I make hummus on autopilot now. It’s the dip I reach for when the fridge looks sad but my appetite wants real food, not just snacks.
