Method
- Rinse the lentils in a fine mesh strainer under cold water. Pick out any odd bits.
- Add lentils and 3 cups water to a medium pot. Bring to a boil, then lower heat and simmer uncovered for 18-20 minutes, until just tender but not mushy. Taste a couple at 18 minutes—you want them holding their shape.
- While the lentils cook, dice the red onion and bell pepper. Cut the cherry tomatoes in half. Chop the parsley and mint. I keep the pieces about chickpea-sized so every forkful feels balanced.
- Drain cooked lentils in a colander and run under briefly under cold water. Let them sit for a few minutes to dry off—you don’t want a soggy salad.
- Mix cooked lentils, diced veggies, tomatoes, and herbs in a large bowl.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the lentil mixture. Toss gently but thoroughly. I like to taste and add a pinch more salt if needed—lentils can be bland if under-seasoned.
- If you have time, let the salad sit 10 minutes at room temp before serving. Flavors marry and the onions mellow a bit.
Notes
I started making this lentil salad on Sundays when I needed something that actually lasted in the fridge but didn’t wilt or get sad by day two. It’s my answer to "now what’s for lunch?" when all I have is 15 minutes and leftovers from the veggie drawer.
