- Rinse the lentils under cold water and check for any small stones. Do not skip rinsing — it keeps the broth clean and avoids grit.
- Bring 3 cups of water to a boil in a medium saucepan. Add lentils. Lower heat and simmer, uncovered, for 18–20 minutes until just tender (not mushy). Taste a few to check.
- Drain lentils and spread them in a large bowl to cool for 5–10 minutes. This prevents the veggies from wilting.
- While lentils cool, chop the red onion, carrot, cucumber, bell pepper, parsley, and mint (if using). Dice everything small for more flavor and easier bites.
- Whisk together olive oil, lemon juice, Dijon mustard, salt, pepper, and minced garlic in a small bowl. Give it a good 30-second whisk so the dressing emulsifies.
- Add all veggies and fresh herbs to the cooled lentils. Pour in the dressing. Toss well so every lentil glistens.
- Taste before serving. I like to add half the salt at first, mix, and then add a pinch more if needed. Eat right away or chill for up to 3 days — it actually tastes even brighter the next day.
Notes
I started making lentil salad on busy weeks when I needed lunches that wouldn't wilt or get soggy. The trick is using small diced veggies and letting the lentils cool before mixing — trust me, it makes the texture spot on and keeps everything crisp.
