Method
- Rinse the lentils well under cold water and set aside. This keeps your soup clear and helps lentils cook evenly.
- Chop the onion, carrots, and celery into small, even pieces. I usually aim for about 1/2-inch dice so everything cooks at the same speed.
- Heat the olive oil in a large pot over medium. When it shimmers, add the onion, carrots, and celery. Sauté for about 5 minutes until softened. Add the garlic and stir for 1 minute—don’t let it burn.
- Add the cumin, smoked paprika, salt, and pepper. Stir until the veggies are coated and you can smell the spices. This step unlocks the flavor before adding any liquid.
- Pour in the lentils, diced tomatoes (with juice), and broth. Toss in the bay leaf. Scrape the bottom of the pot to get up any browned bits (they add flavor).
- Bring to a boil, then immediately drop to a gentle simmer. Cover and cook 30–35 minutes, stirring once or twice. Lentils should be tender but not mushy. If they still taste gritty after 30 minutes, give it 5 more minutes.
- Remove the bay leaf. Squeeze in the lemon juice (I always start with half, taste, then maybe add the rest). Check for salt—sometimes you’ll need an extra pinch at the end.
- Stir in chopped parsley just before serving. Ladle into bowls. I like this soup with crusty bread or a drizzle of olive oil on each bowl.
Notes
I grew up eating some version of lentil soup almost every week, especially on chilly days when there wasn’t much time or budget for shopping. What I love most: it’s hearty, uses what’s on hand, and tastes better after sitting awhile. Even if you think you don’t love lentils, the right seasoning makes a world of difference.
