Method
- Rinse the lentils under running water in a fine mesh strainer. Pick out any debris or small stones.
- Heat olive oil in a large pot over medium heat. Add the diced onion and cook, stirring, until it softens and turns translucent, around 4–5 minutes.
- Add the chopped carrots to the pot. Cook for another 3 minutes, stirring occasionally.
- Add the minced garlic, cumin, smoked paprika, salt, and pepper. Stir for 1 minute just until the spices smell fragrant – don't let the garlic brown.
- Add the rinsed lentils, bay leaf, and water or broth. Stir well, scraping up anything stuck to the bottom of the pot.
- Raise the heat and bring the pot to a gentle boil. When you see steady bubbles, set the heat to low and cover.
- Simmer for 30 minutes. Stir every 10 minutes, scraping the bottom so nothing sticks. Lentils should get tender, and the soup will thicken a bit.
- Taste for seasoning at 25 minutes. I usually add another pinch of salt right at the end if it needs it. Remove the bay leaf.
- Serve hot. Scatter fresh parsley on top if you have it, and drizzle a little extra olive oil for richness.
Notes
I always have lentil soup on rotation during busy weeks because it needs just a little chopping and feeds everyone without drama. You can throw it together from what’s in the pantry, and it’s actually better after a night in the fridge.
