Method
- Drain the olives well if they are packed in brine. This matters for the final texture and saltiness.
- In a food processor, combine the olives, capers, and garlic. Pulse 4–5 times just until the garlic is chopped.
- Add the olive oil, lemon juice, and black pepper. Pulse again until you get a chunky, spreadable paste. Aim for texture, not a smooth puree.
- Taste before adding any salt. If your olives or capers are salty, you might not need extra. If you do, start with a pinch and blend again briefly.
- Scrape into a serving bowl. Tapenade tastes best if you let it sit 10 minutes so the flavors blend, but you can serve it right away.
- I usually keep leftover tapenade in an airtight container in the fridge up to 5 days. The oil might solidify — just let it sit out a few minutes before serving again.
Notes
I always fall back on this olive tapenade when I want to brighten up a table in literally ten minutes. If you buy good olives, you barely have to do anything else.
