Method
- Line a medium baking dish (about 20x20 cm) with parchment, leaving overhang for easy lifting later.
- Bring 3 cups water and 1/2 teaspoon salt to a boil in a medium saucepan. Once boiling, lower the heat.
- Whisk in 1 cup instant polenta in a slow, steady stream. Keep whisking so it doesn’t clump. The polenta will thicken fast.
- Stir for 2–3 minutes until the mixture pulls away from the sides. Take off the heat and mix in 1 tablespoon olive oil, 3 tablespoons parmesan, 1/4 teaspoon pepper, and 1 tablespoon cornstarch. Stir until smooth.
- Scrape the hot polenta into the lined dish. Press it flat with a spatula or piece of parchment on top. It should be about 2 cm thick. Cool at room temp 15–20 minutes until firmed up.
- Preheat your oven to 220°C (428°F). Lift out the firm polenta, use a sharp knife to cut it into fries about 1 cm thick.
- Arrange fries on a parchment-lined baking sheet. Brush each with a little olive oil on all sides.
- Bake 20–25 minutes, flipping once halfway, until crisp and browned at the edges. I always eat one hot off the tray to check they’re really crisp.
- Let cool 2 minutes, then serve with your favorite dip or just as they are. If any stick, slide a metal spatula under while they’re still warm.
Notes
Polenta fries are my way of getting that crispy snack energy without needing a deep fryer or planning ahead. It’s also how I use the half-bag of quick-cook polenta I always seem to have lurking in my pantry.
