- Combine the rice, milk, sugar, salt, and cinnamon stick in a medium saucepan. Stir well to make sure the sugar dissolves.
- Set over medium-low heat. Bring to a gentle simmer, stirring every few minutes so the milk doesn’t scorch on the bottom.
- Once simmering, lower the heat and cook uncovered, stirring often, until the rice is tender and the pudding has thickened, about 30–35 minutes. Don’t walk away — I always scrape the bottom every 5 minutes so the pudding stays silky and doesn’t burn.
- Take the pot off the heat. Remove the cinnamon stick. Stir in the butter, vanilla extract, and ground nutmeg. Taste a spoonful: if you want it sweeter or a touch richer, add another teaspoon of sugar or a drizzle of milk.
- Let it rest 5 minutes to slightly firm up. Serve warm or chilled. I dust with extra cinnamon before serving.
