Method
- Preheat your oven to 425°F (218°C). I use the convection setting when possible for extra crisp.
- Pat the chickpeas as dry as possible with a clean towel. If you skip this, they’ll steam instead of crisping. I even lay them out for 5 minutes to air dry.
- Toss the chickpeas in a bowl with olive oil and salt. Make sure every chickpea is coated. If you want them super crisp, use a little less oil (just enough to lightly coat).
- Add your spices. I start with half the smoked paprika and cumin, toss, then add the rest after roasting so the flavor stays bold.
- Spread the chickpeas on a baking sheet in a single layer. Crowding means soggy chickpeas. I use parchment for easy clean-up but it’s optional.
- Roast for 25–30 minutes, shaking the pan halfway through. They’re done when deep golden and very crisp.
- Let them cool 5–10 minutes. Eat warm, or once cool, store in a jar with the lid cracked—fully sealed makes them go chewy.
Notes
Chickpeas were my go-to snack as a kid, but roasting them was a game changer. Now I make a double batch for the week—most of the time, I eat half from the pan before they even cool down.
