Method
- Preheat your oven to 400°F (200°C). Chickpeas need high heat to get actually crunchy, not just chewy.
- Dry the chickpeas well with a clean towel or paper towels. The drier they start, the crispier the result. I roll them around and pick off any loose skins—they burn and taste weird if you leave them.
- Toss the chickpeas with olive oil, smoked paprika, cumin, salt, and pepper in a large bowl. Make sure each one gets a light coating—bare chickpeas won’t brown or crisp up as much.
- Spread them out on a baking sheet in a single layer. Try not to crowd them; they’ll steam if too close together and never get crunchy.
- Bake for 24–28 minutes. Shake the pan or stir the chickpeas once or twice so they roast evenly. Don’t overdo it—as soon as they look dark golden and you hear a rattle when you shake the pan, pull them out. Taste one. If still soft in the center, give them another 3–4 minutes.
- Cool completely on the pan before eating or storing. They crisp up even more as they cool.
Notes
I started making roasted chickpeas on busy weeknights when I needed something genuinely crunchy, but wanted to skip chips. The trick is getting them totally dry before they hit the oven — that’s when they get snack-shop-level crisp.
