- Preheat your oven to 425°F (220°C). Set a rack in the middle.
- Pat the chickpeas very dry with a clean towel. Any moisture left means less crunch.
- Spread chickpeas on a baking sheet (I always line mine with parchment for easy cleanup).
- Drizzle with olive oil, then toss with salt, smoked paprika, cumin, and black pepper. Shake to coat every pea.
- Roast for 25–28 minutes, stirring halfway. They’re done when they sound a little hollow and some crack open.
- Let cool at least 10 minutes. I usually eat a handful as soon as they’re not lava-hot, but fully cooling makes them crispier.

I keep a jar of roasted chickpeas on my counter because they solve every late-afternoon snack attack—and honestly, sometimes I even toss them onto salads for something crunchy. They last days, and they actually get crispier the next day.

Test with your ears—shake the pan at 25 minutes; if you hear a dry, rattling sound and a few have split, they’re ready or nearly there. For extra crunch, turn off the oven and leave the chickpeas inside with the door cracked open while they cool.
