Method
- Preheat your oven to 425°F (220°C). The high temp is what gets these chickpeas crisp.
- Dry the chickpeas super well. Spread them out on a clean towel and pat until no visible moisture. Wet chickpeas = chewy, not crisp.
- Toss the chickpeas in a bowl with olive oil, salt, smoked paprika, garlic powder, and cumin. Stir until everything looks evenly coated.
- Spread in a single layer on a baking sheet. Do not crowd the chickpeas — use two sheets if you need to so they roast, not steam.
- Bake for 25–28 minutes, shaking the pan halfway so they brown all over. Chickpeas are ready when golden, sounding hollow if you tap one on the baking sheet.
- Let cool 5–10 minutes on the tray to keep their crunch. Eat warm or at room temp. Store in a loose container for max crispiness.
Notes
I started roasting chickpeas when I wanted something crunchy for salads or a fast, salty snack that wasn’t nuts or chips. The first time, half stuck to the tray and the other half went chewy — but a few attempts (and one almost-burnt batch) later, I figured out the little tricks that make them hit the right spot.
