Method
- Preheat your oven to 425°F (218°C). Use the top third rack if you like extra browning.
- Line a large sheet pan with parchment paper or foil, if you want to make cleanup easier.
- Add the carrots, zucchini, red bell pepper, red onion, and broccoli to the pan. Spread them in a single layer — crowded vegetables steam instead of roasting.
- Drizzle the olive oil all over the veggies. Sprinkle on the salt, black pepper, oregano, and thyme.
- Mix the vegetables right on the pan with your hands. I do this because I can make sure every piece really gets coated without dirtying another bowl.
- Roast for 23–27 minutes. About halfway, use a flat spatula to toss everything. This helps the edges crisp up evenly. Don't skip it — that's how you get those caramelized bits.
- Once the vegetables are browned and the carrots are fork-tender, remove the pan from the oven. Taste one piece of each. If you want a bit more salt, add it now — I usually find a little sprinkling at the end wakes up all the flavors.
Notes
I lean on roasted vegetables when the fridge is crammed with odds and ends or when I just want something colorful that makes people eat more veggies without a whimper. If there’s one side I never get tired of, it’s this — especially with the crispy corners, which I can’t help but snack on straight from the pan.
