- Bring a large pot of salted water to a boil. Add the spaghetti and cook 1 minute less than the package directions—the pasta finishes in the sauce.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced garlic and anchovies. Stir until the garlic is fragrant and anchovies have mostly melted—about 2 minutes. Don’t let the garlic brown.
- Add red chili flakes, then toss in the chopped olives and drained capers. Give everything a quick stir—things will pop and sizzle.
- Pour in the canned tomatoes. Use a spoon to break up any whole pieces. Simmer for 8–10 minutes. It should thicken but still be saucy. Taste and add half the salt first, then adjust if you need more. Anchovies and capers bring a lot of saltiness already.
- Drain the pasta, reserving 1/2 cup of the cooking water. Add spaghetti to the skillet with the sauce. Toss over medium heat for 2 minutes, adding pasta water a splash at a time until you get a glossy, not watery, sauce.
- Off the heat, stir in the fresh parsley and black pepper. Serve right away—puttanesca is all about punchy, bright flavors fresh from the pan.

Honestly, I make spaghetti puttanesca when everyone’s hungry and I need dinner sorted in under half an hour—no planning, just pantry finds. The anchovies melt into the sauce instead of standing out, and I never hear complaints from skeptical eaters at my table.
