Filling
- Wash and dry the spinach well. If using large leaves, chop roughly.
- Heat the olive oil in a large pan. Add chopped onion and sauté over medium heat until soft, about 4 minutes.
- Add the spinach to the pan. Cook, stirring, until wilted and most liquid has evaporated — about 6–8 minutes. Let cool completely.
- Squeeze the spinach in a clean kitchen towel to remove excess moisture. You really want it dry or the pie will get soggy.
- In a bowl, mix spinach, crumbled feta, ricotta, beaten eggs, chopped dill, and black pepper. Set aside.
Assembly and baking
- Heat oven to 375°F (190°C).
- Brush a baking dish (about 9x13 inches) with olive oil.
- Lay the first sheet of phyllo in the dish. Brush with olive oil. Repeat, layering 5–6 sheets for the base. Keep phyllo covered with a barely damp towel while you work so it doesn't dry out.
- Spread the spinach filling evenly over the phyllo.
- Layer the rest of the phyllo sheets on top, brushing each one with olive oil. Use at least 5–6 more sheets.
- Trim or tuck the edges of phyllo so they're neat. Brush the top with any remaining olive oil.
- Score the top with a sharp knife into squares or triangles. Don't cut all the way through — just to the filling.
- Bake for 35–40 minutes until deeply golden and crisp. Let rest 10 minutes before slicing.
Notes
Spanakopita is the one thing I make when I want something both comforting and actually green. I grew up eating a version of this at family gatherings and figured out what matters through trial and error: don’t rush the spinach, and don’t skimp on the olive oil.
