- Preheat the oven to 190°C/375°F. Lightly grease a baking dish.
- Prepare the bell peppers: Cut the tops off the peppers and remove seeds and membranes. Place them upright in the baking dish.
- Sauté the aromatics: In a skillet, heat the olive oil. Add the onion and garlic, cooking for 2 minutes until softened.
- Add the ground beef (or turkey), breaking it up with a spoon. Cook until browned and cooked through. Stir in the grated carrot and cook for 1 minute.
- Mix in the cooked brown rice, tomato sauce, oregano, paprika, salt, and black pepper. Combine everything well and simmer for 3 minutes.
- Stuff the peppers: Fill each pepper generously with the prepared beef and rice mixture. Press down slightly to pack tightly.
- Sprinkle the grated mozzarella cheese on top of each stuffed pepper.
- Bake in the oven for 35–40 minutes or until the peppers are tender and cheese is melted and golden.
- Remove from the oven and allow to cool for a few minutes before serving. Enjoy your stuffed peppers!
