- Soak the bulgur: Place the bulgur in a bowl and pour just-boiled water over it. Cover and let it sit for 15–20 minutes until the grains are tender but still hold their shape. Drain off any excess water.
- Prepare vegetables and herbs: While the bulgur soaks, finely chop the parsley and mint (removing parsley stems is worth the extra minute). Dice the tomatoes and cucumber into small, even pieces. Thinly slice the scallions. Transfer everything to a large bowl.
- Fluff the bulgur: Once soaked, fluff the bulgur with a fork to separate the grains. This prevents gumminess when you mix.
- Combine: Add the cooled, fluffed bulgur to the bowl with vegetables and herbs.
- Make dressing: In a small bowl, whisk olive oil, lemon juice, half the salt, and black pepper. Taste after whisking—if the lemon seems too strong, add a splash more oil until it balances out for you.
- Toss salad: Pour the dressing over the bulgur and veggies. Mix until everything is well coated. Taste—add the rest of the salt if you want more brightness.
- Let it sit (optional but worth it): Let the tabbouleh rest for 5–10 minutes before serving, so the flavors soak in. If making ahead, cover and refrigerate—just bring it to room temperature before eating for best texture.
Notes
I make tabbouleh whenever I want something that tastes bright but won’t leave me hungry two hours later. All that parsley and bulgur keeps me surprisingly full, and it’s easy to double for lunch the next day.
