  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper freshly ground
  • 0.5 teaspoon dried oregano
  • 1 unit bay leaf
  • 2 tablespoon fresh basil chopped, plus a few leaves for garnish

Method
 

  1. Preheat the oven to 200°C (392°F). Place the chopped tomatoes, onions, carrots, and celery on a baking sheet. Drizzle with olive oil and roast for about 20 minutes, stirring halfway through, until the vegetables are soft and slightly caramelized.
  2. Heat a large pot over medium heat. Add the roasted vegetables and garlic. Sauté for 2 minutes until fragrant.
  3. Add the vegetable broth, bay leaf, salt, pepper, and dried oregano. Mix well and bring to a simmer.
  4. Cover the pot and cook for 10 minutes, stirring occasionally. Remove the bay leaf afterwards.
  5. Use an immersion blender (or transfer in batches to a blender) to blend until smooth. Taste and adjust salt or pepper if needed.
  6. Stir in fresh basil. Serve hot, garnished with extra basil leaves and a drizzle of olive oil if desired.
