Method
Roasting the vegetables
- Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper.
- Slice the eggplants and potatoes into 1/3-inch rounds. Arrange in a single layer on the baking sheets. Brush with olive oil and sprinkle salt generously—eggplant really needs it.
- Roast for 25–30 minutes, flipping halfway, until the edges are golden and the veggies are soft. If some pieces brown faster, pull them out early so nothing burns.
Making the lentil filling
- While the veggies roast, cook the lentils: Fill a saucepan with water, add the lentils, and bring to a boil. Simmer about 20 minutes—just until tender, not mushy. Drain and set aside.
- Heat olive oil in a large skillet. Add onion and cook 5–6 minutes until soft, then stir in garlic and carrot. Cook for another minute until garlic is fragrant.
- Mix in the cinnamon, oregano, and smoked paprika. Add tomato paste and cook 1 minute to deepen the flavor before adding tomato sauce, water, and salt.
- Add the cooked lentils. Simmer everything together, uncovered, for 10–12 minutes, until thick like a stew. If it looks dry, splash in a bit more water. Taste and adjust salt near the end.
Preparing the cashew béchamel
- Drain the soaked cashews. In a blender, combine cashews, plant milk, nutritional yeast, lemon juice, salt, and nutmeg. Blend on high until totally smooth—about 1 minute, scraping the sides once. The sauce should be creamy but pourable; add a little extra plant milk if it’s too thick.
Assembling and baking
- Lower the oven to 375°F (190°C).
- In a 9x13 inch baking dish, start with a layer of roasted potatoes, then half the roasted eggplant. Spread all the lentil filling over, then finish with the rest of the eggplant. Pour the cashew béchamel all over the top; use a spatula to spread it smoothly.
- Bake for 30–35 minutes, uncovered, until the top starts to turn golden brown in spots. Let it rest at least 15 minutes before slicing, so the layers set and it’s easier to serve.

This vegan moussaka is what I cook when I want comfort food that doesn’t leave me feeling heavy. The lentils bring steady energy, the roasted veggies get sweet and savory, and that cashew sauce is the thing that finally convinced my mom you don’t need dairy for a creamy top.
