Method
Prepare the eggplant and vegetables
- Preheat your oven to 220°C (425°F). Line a baking sheet with parchment.
- Slice the eggplant into 0.5 cm thick strips. Arrange on the baking sheet, sprinkle with half the salt, and drizzle with 1 tbsp olive oil. Roast for 15–18 minutes until soft and lightly browned, flipping halfway. Set aside.
- While the eggplant cooks, heat 1 tbsp olive oil in a large skillet over medium heat. Cook onion, garlic, carrot, and celery for 6–8 minutes with remaining salt and pepper, stirring until soft.
Prepare the lentil filling
- Add cooked lentils, canned tomatoes, tomato paste, oregano, cinnamon, smoked paprika, and 1/2 cup water to the skillet with the vegetables. Stir well.
- Let this simmer (medium-low heat) for 15 minutes until thick. Taste. If it seems underseasoned, add a big pinch of salt—not just a sprinkle.
Make the cashew béchamel
- In a blender, combine soaked cashews, plant milk, nutritional yeast, lemon juice, and salt. Blend until completely smooth—this usually takes a full minute. If it's grainy, scrape the sides and blend again. Texture matters more than you think.
Assemble and bake
- Lower oven temperature to 180°C (350°F).
- Layer half the roasted eggplant on the bottom of a medium casserole dish. Spread all of the lentil filling over, then top with the rest of the eggplant. Pour the cashew béchamel on top, smoothing with a spatula.
- Bake, uncovered, for 25–30 minutes until the top is golden and a little firm. Let cool at least 10 minutes before serving. (It's much easier to cut tidy slices if you have that patience—learned the hard way.)
Notes
Moussaka is one of those dishes I crave on busy weeks because you get veggie comfort, a filling protein, and that creamy, craveable top all in one. Plus, the cashew béchamel is my favorite hack for making things taste special but still simple.
