Method
- Preheat your oven to 230°C (450°F). Line a baking tray with parchment or foil for less mess.
- Prick the eggplants all over with a fork. Place them on the tray and roast for 20-25 minutes, turning halfway, until the skins are charred and the inside feels soft.
- Let the eggplants cool enough to handle. Slice them open and scoop out the flesh with a spoon. The smoky bits near the skin are gold—don’t leave them behind.
- Transfer the eggplant flesh to a colander. Let it drain for 5 minutes to avoid watery dip. You can give it a gentle press with a spoon.
- Add the eggplant to a bowl with tahini, lemon juice, garlic, olive oil, salt, and cumin. Mash with a fork (or use a food processor if you like it super creamy). I always add half the salt first, taste, and adjust from there.
- When it tastes just right, scoop it into a serving bowl and drizzle with a little more olive oil. Top with chopped parsley.
- Serve with warm pita, veggie sticks, or use as a spread in sandwiches.
Notes
I started making baba ganoush because I wanted a snack that was actually filling but didn’t take over my kitchen. Roasting the eggplant until it almost collapses makes all the difference for that smoky, deep flavor.
