Method
Marinade and chicken
- Combine chicken pieces, olive oil, lemon juice, dried oregano, salt, pepper, and garlic in a bowl. Toss everything well so each piece gets coated.
- Cover and marinate in the fridge for at least 15 minutes. If you remember, stir halfway for even flavor. You can do this up to 12 hours ahead—handy for busy evenings.
Yogurt sauce
- Stir together Greek yogurt, lemon juice, olive oil, chopped dill (or mint), and salt in a small bowl.
- Let it chill in the fridge while you cook the chicken. This gives the flavors a minute to meld.
Cooking the chicken
- If using wooden skewers, soak them in water for 10 minutes (they burn fast otherwise).
- Thread marinated chicken onto skewers—not too tight, they need some space to cook through.
- Heat a grill pan, outdoor grill, or heavy skillet until a drop of water sizzles instantly. Cook skewers for about 4-5 minutes per side, until edges brown and the centers are opaque. If you crowd the pan, the chicken steams instead of grills—work in batches if needed.
Serving
- Warm pita bread briefly on the grill or in a dry pan, just enough to make it tender.
- Arrange chicken, pita, cucumber, tomato, onion, and yogurt sauce on a big platter. Let everyone build their own (the kids love that part). Eat while hot.
Notes
I make chicken souvlaki when I want something guaranteed to hit the table fast, with all the Greek flavors I grew up on. The yogurt sauce is always what makes people go back for seconds.
