Method
- Rinse the sardines under cold water and pat them dry with paper towels. If you see any remaining scales, gently scrape them off with the back of a knife.
- Put the sardines in a shallow dish and drizzle with olive oil on both sides. Sprinkle with half of the sea salt and pepper, making sure to season inside the cavity if they're gutted.
- While the sardines sit, preheat your grill (gas, charcoal, or grill pan) until it’s very hot — if you drop a bit of water, it should sizzle and evaporate fast.
- Rub the grill grates with a scrap of onion or oiled paper towel so the fish won’t stick as much. I never skip this, it really helps.
- Lay the sardines on the grill. Cook for 3–4 minutes per side, turning carefully with a wide spatula or tongs when the first side is crisp and lifts easily. Don’t fuss with them or the skin will tear.
- Once both sides are nicely charred and the flesh flakes at the thickest part, transfer the sardines to a platter right away.
- Squeeze fresh lemon over the hot sardines, sprinkle with chopped parsley, and add a small pinch of salt if you like. If you want a punchier flavor, top each with a bit of grated raw garlic while still hot.
- Serve immediately, with extra lemon wedges on the side. These are best eaten hot and right off the grill — the skin tastes crispiest this way.

Grilled sardines always take me straight back to childhood summers — smoky, lemony, messy, and unapologetically hands-on. I make this when I want something unfussy that still feels like I’m on vacation at home.
