- Rinse the lentils in a mesh strainer under cold water. Pick out any odd bits or debris.
- In a medium saucepan, combine lentils and 3 cups fresh water. Bring to a simmer. Don’t add salt yet—it keeps the lentils from cooking through.
- Simmer, uncovered, for 16–20 minutes until lentils are tender but not mushy. Taste two or three to check.
- While the lentils cook, dice the red onion (about half a small one), halve the cherry tomatoes, dice the cucumber, and chop parsley.
- When lentils are done, drain well and spread on a plate to cool quickly—this keeps them from steaming and turning mushy.
- While still warm, toss lentils with olive oil, lemon zest, and juice (from the whole lemon). This helps them soak up flavor.
- Add the red onion, tomatoes, cucumber, parsley, and half the feta. Sprinkle in half the salt (about 1/4 teaspoon) and all the pepper. Toss gently.
- Taste. Add more salt if needed, then add the rest of the feta on top.
- Serve slightly warm or let chill 30 minutes in the fridge. Keeps well up to 3 days.
Notes
I make this lentil salad when I want something filling and fresh, but don’t want to cook for more than half an hour. It’s become my go-to for Sunday meal prep or workday lunches.
