  • 2 unit celery stalks chopped
  • 2 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 1 unit bay leaf
  • 5 cup vegetable broth
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper

Method
 

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Add the garlic and cook for 1 minute, stirring constantly to avoid burning.
  4. Stir in the cumin, smoked paprika, and dried thyme. Cook for another minute to release the fragrances.
