Method
- If using wooden skewers, soak them in water for at least 15 minutes. This keeps them from burning on the grill or grill pan.
- In a large bowl, combine olive oil, lemon zest, lemon juice, oregano, paprika, salt, pepper, and minced garlic. Whisk to blend.
- Add the turkey cubes and toss well. I always use my hands here — gets every piece coated. Let it marinate 10 minutes (or up to 30 in the fridge if you have time).
- Thread the turkey pieces onto the skewers, not crowding them — I leave 3–5 mm space between each so they cook evenly.
- Preheat a grill pan or outdoor grill over medium-high heat. It’s ready when a drop of water sizzles instantly.
- Place skewers on the grill and cook 6 minutes per side (12 minutes total). You want lightly charred edges and juices to run clear.
- Rest the skewers on a plate for 2 minutes before serving. Squeeze extra lemon over if you like.

Honestly, I started making these turkey skewers because ground turkey bored me, but chunks of turkey breast grilled with lemon and herbs? Never gets old — especially when you want dinner that cooks fast and doesn't dry out.
