- Grate the cucumber (no need to peel unless the skin is very waxy). Then squeeze out as much liquid as you can using a clean dish towel or your hands. This keeps the tzatziki from getting watery.
- In a medium bowl, combine the Greek yogurt, the squeezed cucumber, olive oil, lemon juice, minced garlic, and chopped dill. Add only half the salt and pepper at first.
- Mix until everything is well blended. Taste it: now decide if it needs a bit more salt or an extra squeeze of lemon. Adjust to your liking.
- Cover and chill for at least 10 minutes—trust me, it makes the garlic mellow and the flavors combine.
- Stir once more and serve with a drizzle of olive oil. I like it alongside toasted pita or raw veggies.
Notes
I started making tzatziki at home for nights when ordinary salad just won’t cut it. It turns any quick dinner — even store-bought falafel or roasted veggies — into something that feels like a meal someone cared about.
