Method
 

Preparing the vegetable sauce
  1. Heat olive oil in a large pan over medium heat. Add the diced onion and minced garlic, and sauté until soft and fragrant, about 2 minutes.
  2. Stir in the zucchini, carrot, red bell pepper, and mushrooms. Cook, stirring occasionally, until the vegetables are tender and have released their moisture, about 6-8 minutes.
  3. Add the crushed tomatoes, salt, black pepper, and dried oregano. Mix well and simmer for 8-10 minutes, until the sauce thickens slightly. Remove from heat.
Assembling the lasagna
