Ingredients

  • 500 g turkey breast cut into cubes
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 unit red bell pepper cut into chunks
  • 1 unit zucchini cut into rounds
  • 1 unit red onion cut into pieces
  • 8 unit bamboo skewers soaked in water

Method

  1. Preheat your grill or grill pan to medium-high heat.
  2. In a large bowl, combine the olive oil, lemon juice, garlic powder, dried oregano, paprika, salt, and black pepper to make a marinade.
  3. Add the turkey cubes to the marinade. Toss well to coat, then let sit for at least 10 minutes for better flavor.
  4. Thread turkey cubes, bell pepper, zucchini, and red onion alternately onto the soaked bamboo skewers.
  5. Place the skewers on the hot grill. Cook for 10-12 minutes, turning occasionally, until the turkey is cooked through and nicely browned.
  6. Serve immediately with a sprinkle of fresh herbs, if desired.

Notes

Looking for a delicious alternative to traditional grilled meats? Turkey skewers are a standout choice: they’re lean, flavorful, and adapt beautifully to countless marinades and pairings. Whether you’re planning a quick weeknight dinner or a festive cookout, these skewers deliver taste and simplicity in every bite.
For best results, marinate the turkey for at least 10 minutes, but if you have time, let it sit longer (up to 2 hours in the fridge) to maximize tenderness and flavor. Using fresh lemon juice will brighten the dish, and swapping dried oregano for fresh can add extra zing.
Tip: Soak your bamboo skewers in water for 20–30 minutes before threading to avoid burning them on the grill. If you don’t have a grill, a stovetop grill pan or even your oven’s broiler works well.
Vegetable flexibility is another plus: bell peppers, zucchini, and red onion are classics, but you can easily swap in mushrooms, cherry tomatoes, or eggplant. For a spicier punch, sprinkle a bit of crushed red pepper into your marinade.
To ensure even cooking, cut the turkey and vegetables into uniform pieces. This prevents dryness and helps everything cook at the same pace. When grilling, rotate the skewers occasionally for even browning.

Serving & Pairing Ideas

Serve your turkey skewers over a bed of herbed couscous, with a fresh Greek salad, or alongside warm pita bread and a tangy yogurt sauce. You can double the recipe for a crowd, or prepare ahead; leftovers work great in wraps or salads for lunch.
If you want to experiment, try different marinades—think honey-mustard, teriyaki, or citrus-herb mixes. Each variation brings a new twist on this Mediterranean classic, making it a recipe you’ll return to time and again.
