- Soak wooden skewers in water for at least 20 minutes to prevent burning, if using wooden ones.
- In a bowl, combine turkey cubes, olive oil, lemon juice, smoked paprika, garlic powder, oregano, salt, and black pepper. Mix well to coat all pieces evenly.
- Add the chopped bell pepper, zucchini, and red onion to the marinade. Toss gently so the vegetables are flavored as well.
- Assemble the skewers by alternating turkey, bell pepper, zucchini, and onion chunks onto each skewer.
- Preheat a grill or grill pan over medium-high heat. Once hot, lightly oil the grill grates.
- Place the skewers on the grill and cook for about 12–15 minutes, turning occasionally, until the turkey is cooked through, golden, and juicy.
- Remove from the heat and let rest for 2 minutes before serving. Enjoy immediately!
