Ingredients
  

  • 500 g shrimp, peeled and deveined medium to large size
  • 2 tablespoons olive oil
  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 400 g canned chopped tomatoes or fresh, ripe tomatoes, chopped
  • 100 ml dry white wine
  • 0.5 teaspoon red pepper flakes optional, for heat
  • 1 teaspoon dried oregano
  • 150 g feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste

Method
 

  1. Season the shrimp with a pinch of salt and black pepper. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  4. Pour in the white wine and let it simmer for about 2 minutes so the alcohol can evaporate.
  5. Add the chopped tomatoes (with their juices), red pepper flakes, and oregano. Season lightly with salt and pepper. Simmer uncovered for 10-12 minutes, stirring occasionally, until slightly thickened.
  6. Place the shrimp gently into the sauce. Cook for 4-5 minutes, turning or stirring once, until just pink and cooked through. Do not overcook the shrimp.
  7. Reduce the heat to low and sprinkle the crumbled feta evenly over the shrimp in the skillet. Cover and let it warm through for 2-3 minutes until slightly melted.
  8. Remove from heat. Sprinkle with fresh parsley and serve immediately, ideally with crusty bread.
