Shrimp saganaki, classic Greek shrimp in rich tomato sauce with feta. Quick recipe full of flavor to brighten any meal!

Method
- Season the shrimp with a pinch of salt and black pepper. Set aside.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3 minutes.
- Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
- Pour in the white wine and let it simmer for about 2 minutes so the alcohol can evaporate.
- Add the chopped tomatoes (with their juices), red pepper flakes, and oregano. Season lightly with salt and pepper. Simmer uncovered for 10-12 minutes, stirring occasionally, until slightly thickened.
- Place the shrimp gently into the sauce. Cook for 4-5 minutes, turning or stirring once, until just pink and cooked through. Do not overcook the shrimp.
- Reduce the heat to low and sprinkle the crumbled feta evenly over the shrimp in the skillet. Cover and let it warm through for 2-3 minutes until slightly melted.
- Remove from heat. Sprinkle with fresh parsley and serve immediately, ideally with crusty bread.
