  • 1 cup small pasta like ditalini or elbow
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper
  • 2 cup fresh spinach chopped
  • 2 tbsp fresh parsley chopped
  • 0.25 cup grated parmesan cheese optional, for serving

Method
 

  1. Heat 1 tbsp of olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for about 2 minutes until fragrant.
  2. Add the carrots, celery, zucchini, green beans, and potato to the pot. Cook, stirring occasionally, for 5 minutes until vegetables start to soften.
  3. Add the canned diced tomatoes and vegetable broth. Stir in the oregano, basil, salt, and black pepper. Bring everything to a gentle boil.
